School Morning Muffins (Orange + Dark Chocolate Chunk)

Ingredients

  • 3 c flour
  • 3/4 c cane sugar
  • 1 1/2 T baking powder
  • 3/4 t sea salt
  • 6-8 T collagen peptides
  • 2 eggs beaten
  • 1 1/2 c buttermilk
  • 6 T salted butter melted and cooled
  • 1 1/2 t vanilla
  • 6 oz chopped dark chocolate 72% cacao
  • 2 oranges zested

Instructions

  1. Preheat oven to 350°.  

  2. Prepare 12-count muffin tin by spraying with non-stick spray.

  3. In a medium mixing bowl, combine dry ingredients.

  4. Add remaining ingredients, stirring to combine*.

  5. Fill tins 3/4 full and bake for 20-22 minutes until inserted toothpick comes out clean. Cool for 5 minutes before serving. Bake additional muffins as directed above.

Recipe Notes

*Be careful not to over mix, leaving pea-sized bits throughout will ensure the muffin doesn't get too tough and dry during the baking process.
