Strawberry Orange Summer Slaw

Slaw Dressing

  • 1 T fresh orange zest
  • 1/2 medium orange pith removed, sectioned and chopped
  • 2 T fresh chives chopped
  • 6 oz olive oil
  • 4 oz champagne vinegar
  • 1/2 c chopped fresh strawberries
  • 1/3 c strawberry jam
  • 1 t sea salt
  • 1/2 t black pepper optional


  • 3 c green cabbage finely chopped
  • 2 c purple cabbage finely chopped
  • 1/2 c sliced almonds optional


  1. In a medium mixing bowl, combine slaw dressing ingredients. Stir to evenly incorporate all ingredients.

  2. Add finely chopped cabbage to a large serving bowl.

  3. To serve immediately, pour dressing over chopped cabbage and toss to evenly coat. Top with sliced almonds and serve.

  4. If serving later, do not combine. Cover dressing and slaw and refrigerate up to 3 days. Combine and toss to serve.
