How many of you can relate to this struggle?? School morning breakfast. With four school-aged kiddos, finding something they’ll all eat [that’s not got ‘sugar bomb’ in the name] is nearly impossible. 

It has to be quick but it also needs to be sustaining AND it must be picky-kid-approved. Seems like an impossibility, right?

I’ve tried energy bites, egg cups, make-ahead pancakes, smoothies (don’t even get me started on my smoothie efforts), over-night oatmeal — just to name my recent endeavors. One or two kids will love something and the others will gag at first glance. I’m determined to find the thing that’s a win for all four kiddos.

These ‘School Morning Muffins’ aren’t your typical ‘off-the-shelf’ muffins. For starters – let’s talk about what these muffins DON’T have ::

  • there’s no fake colors,
  • no fake flavors  
  • no preservativos
  • no additives
  • no stabilizers

This recipe contains a simple list of pronounceable ingredients! The real stars of this muffin recipe come with some added benefits!

  • 72% cacao dark chocolate (rich in anti-oxidants)
  • orange zest (vitamin C, beta carotene and lycopene)
  • collagen peptides (added protein, improves digestion & athletic performance)

The beauty of making your own muffins is the opportunity to tuck in some hidden nutrition! It sure gives this momma an added level of confidence knowing I’m sending my kiddos off to school with a tum full of much needed nutrition to full them until lunch!

A little suggestion — Although I’m practically bragging about the nutritious aspects of this school morning muffin recipe, be sure not to pass on these benefits to your unsuspecting kiddos! If they’re anything like mine, they’ll reject it before the first bite crosses their mounts. (Trust me!)

And – orange + chocolate aren’t the only muffin possibilities. The base of this recipe can be manipulated to accommodate even the most persnickety palates! 

How about

  • blueberry + lemon
  • blackberry + cinnamon
  • apple + oat
  • pumpkin nut + spice
  • vanilla + chocolate chip

Depending on your additions, you may need to reduce the buttermilk or increase the baking time in order to reach the desired doneness – but this basic recipe is begging for your own personal flavor favorites!

My favorite part?! The kiddos have no idea that they just devoured something health-full! Well, the fact that I let them go back for seconds may have raised some suspicions (they know I don’t give seconds on sweets — especially during breakfast!) – but I heard NO complaints. I call that a WIN!

The orange zest and dark chocolate were the perfect pairing in this tender, moist, perfectly sweetened School Morning Muffin! And whether you have school-aged kiddos or just need to add a little more “nutrition” to your morning routine — I hope this recipe brings a smile to your breakfast!

 


I’m sharing this modified, speedy Creamy Broccoli Cheddar Soup recipe with you! This recipe skips a few traditional steps without skimping on flavor or creaminess and (as it’s name says) comes together in 20 minutes.

 

School Morning Muffins (Orange + Dark Chocolate Chunk)

Servings 18

Ingredients

  • 3 c flour
  • 3/4 c cane sugar
  • 1 1/2 T baking powder
  • 3/4 t sea salt
  • 6-8 T collagen peptides
  • 2 eggs beaten
  • 1 1/2 c buttermilk
  • 6 T salted butter melted and cooled
  • 1 1/2 t vanilla
  • 6 oz chopped dark chocolate 72% cacao
  • 2 oranges zested

Instructions

  1. Preheat oven to 350°.  

  2. Prepare 12-count muffin tin by spraying with non-stick spray.

  3. In a medium mixing bowl, combine dry ingredients.

  4. Add remaining ingredients, stirring to combine*.

  5. Fill tins 3/4 full and bake for 20-22 minutes until inserted toothpick comes out clean. Cool for 5 minutes before serving. Bake additional muffins as directed above.

  6. Makes 18

Recipe Notes

*Be careful not to over mix, leaving pea-sized bits throughout will ensure the muffin doesn't get too tough and dry during the baking process.
