Cheesy Pepperoni Herb Crackers

We’re on the verge of Fall and, in our country, that means all sorts of things — right?! It’s ‘back to school’, football is in the air and maybe, just maybe the temperatures will start to slip into a more pleasant range.

With all these happenings, I can’t help but begin the hunt for THE perfect football watch party snack. In fact, here are a few recipes — perfect for football watching — that I’ve shared on the Sinkology blog over the years.

For this year’s game day recipe, I’m packing a TON of crave-worthy flavors into a super simple snack. Not only does this cheesy cracker taste amazing, it’s easy to assemble and begs to be made ahead. ((My aim is to make sure food prep doesn’t prevent you from seeing that big play!))

Here are a few things about this recipe I LOVE ::

  • this recipe has just 7 simple ingredients
  • the topping can be made up to a week in advance
  • these cheesy crackers are tasty whether warm or cold
  • oh, and did I mention — they’re tasty?!

For this recipe, you’ll start off by combining the first 6 ingredients (everything but the crackers). You can make this ahead and refrigerate until game day. Then, depending on the size of your crackers, place a 1-2 T scoop of cheese/pepperoni mixture atop each cracker.

Arrange each cracker, spaced evenly, on a rimmed baking sheet. Place into a 375° preheated oven for 6-8 minutes or until the cheese has just barely melted but isn’t bubbling.

A couple of tips for success ::

— don’t overload the crackers. Less really is more in this situation. Using too much will overspill the edges of the crackers and make for a messy (but still so tasty) snack.

— don’t bake too long or else the fats will separate from the cheese solids and you’ll be left with a greasy (slightly less tasty) mess.

— last tip — feel free to improvise! Sub in ham or salami, switch up the cheeses or maybe add in a little red pepper flakes.

These cheesy crackers are really a perfect bite and the little addition of Dijon mustard and fresh herbs makes these treats something special! I hope you enjoy them while you’re cheering your team to victory! (BOOMER)

Cheesy Pepperoni Herb Crackers

  • 1/3 lb pepperoni slices, finely chopped
  • 8 oz Monterey Jack cheese, shredded
  • 3-4 T salted butter, room temperature
  • 1/4 t sea salt
  • 1 t dijon mustard
  • 3-5 T fresh herbs, chopped (I used thyme, basil, oregano and sage)
  • 45 butter crackers or stoneground wheat crackers of your choice

Preheat oven to 375°. Evenly place 15-24 crackers on a rimmed baking.

In a medium bowl, combine chopped pepperoni, Monterey Jack cheese, butter, salt, dijon mustard and herbs.

Depending on the size of your crackers, place 1-2 T of the pepperoni cheese mixture in the center of each cracker (less is more in this step, too much will melt and ooze right off the crackers).

Using a knife or spatula, gently flatten the pepperoni cheese mixture,

Place into the preheated oven for 6-8 minutes, until the cheese is just melted.
